The menu ranges from timeless favorites like strangolapreti, canederli, and venison salmì—reimagined with a modern twist featuring a surprising chocolate cream sauce—to creative dishes such as potato gnocchi stuffed with porcini mushrooms and Casolet cheese, served with Trentingrana foam and beetroot powder.
There is no shortage of signature dishes, such as the Trentino-style burger, prepared with carne salà—a cured pork typical of the lower Vallagarina region, supplied by Antica Macelleria Cappelletti—and the iconic Cimbrian salad with raisins, pine nuts, sauerkraut, fried polenta, and Pratomagno fondue, a dish that tells the story of the region through every ingredient.
