La Baita Del Neff redefines fine mountain dining in the heart of Alpe Cimbra, under the guidance of Chef Cristiano Bosco, who has led the project for eight years with a vision deeply rooted in the territory and its seasonal rhythms.

In the kitchen, a young and tightly knit brigade blends Alpine tradition with contemporary influences, creating dishes that tell the story of forests, pastures, and mountain huts, while always preserving authenticity.

The culinary proposal arises from the encounter between historic Trentino mountain recipes and modern techniques: slow cooking, fermentations, stews, and recovery dishes are reinterpreted with sensitivity and precision.

The pastry section, curated by Eugenio Osele, draws inspiration from undergrowth aromas, wild herbs, and seasonal fruits, concluding the dining journey with elegant and never predictable desserts.

Located on Virgo Maria, the restaurant is strongly committed to environmental protection and works exclusively with zero-kilometre products.

Raw materials come from small local producers, alpine huts, and farmers from the plateau, as well as from wild foraging in the surrounding area.

A bold choice that requires flexibility and creativity, but ensures an authentic connection to the mountains.

The dining room is intimate and carefully designed, with only a few tables set with natural fabrics and handcrafted ceramics.

The open kitchen strengthens the dialogue between guests and chefs, while the wine cellar offers a selection of Trentino, Alpine, and natural wines, accompanied by attentive and personalised service.
