The Nosellari leek is characterised by its large and very rounded base: the leaves fan out at the end of a rather small stem. The base is white fading to dark green at the ends. One leek weighs approximately 800 grams.

The taste of this leek is very delicate, which is why it has many uses in the local cuisine: it can be served boiled or used, together with the leaves, to prepare soups and risottos. The leaves can also be boiled on their own.
